Preparation of Kodo Millet / Varagu arisi Upma (cooking method for kodo millet)

Soak kodo millet in water. after 20 mins drain water.
Add oil and heat the pan. and then add Mustard, Urad dal.
Mustard is splutters and then add Onion, Green chillies and Curry leaves.
When the onion turn golden brown and then add Tomatoes.
later add mixed vegetables and turmeric powder.
Add salt for taste. And then add water in medium flame.
when the water gets boiled and then add millet.
Mix it in low flame for 15 to 20 mins.
After that add coriander leaves.

Take pan and roast Ragi flour in medium flame for 5 mins.
Add Rice flour and pinch of salt for taste. And then add the hot water, mix it well. after that close the bowl with lid for 15 mins. And then split into small balls.
Take idiyappam press and load the Prepared balls . Press the idiyappam strings into idli plates (before that oil the idli plates). Place the idli plates into idly cooker.And then Steam it into 8 to 10 mins.
when the Ragi idiyapam is ready to serve.

Ingredients for pani varagu sweet paniyaram
kodo millet/ pani varagu – 1cup
Banana -1
Naatu sarkkarai – 1Cup
Urad dal – 2tsp
Toor dal – 1tsp
Fenugreek seeds – 1/4 tsp
Pinch of salt
Cardamom – 1
Oil / Ghee

Preparation of Kodo millet sweet paniyaram
(cooking method for panivaragu paniyaram)

Take the Kodo millet wash it with water.
Soak kodo millet with Toor dhal, Urad dhal for 2 to 3 hours.
After that Drain the water, and then Grind it like Smooth Paste.
Add Nattu Sarkkarai, banana and mix it well. Close it with lid for 3 to 5 hrs.
After that add salt and Cardamom.
Take the pan add the oil/Ghee with low flame.
And then place the prepared mix into pan.
After 2 mins flip it and cook for another 2 mins in low flame.
When the Panivaragu sweet Paniyaram is ready.

Foxtail Millet Nutritious Pepper Pongal

Requirements

Foxtail Millet Rice – a cup
Pasi Paruppu – ¼ Cup
Pepper – 2 Spoon
Cirakam – 2 Spoon
Himalayan Salt – As Required
Ghee – 1 Tablespoon
Curry leaves – Required Qty
Ginger – Small Qty
Cashew – 5 Nos

Squash Ginger, grate it and chop finely.

Fry Pasi peruppu in a pan.

Put the Foxtail Millet rice and Fried Pasi perupu in a cooker and add cumin, ginger, salt and 4 cups of water and let it boil.

Leave the ghee in the frying pan, add the cashews, curry leaves, Mix it with pongal and serve.

Foxtail Millet Upma

INGREDIENTS

1 cup Foxtail Millet or Thinai 1 cup
1 tbsp Woodpressed Oil
1 tsp Chana Dal
Mustard Seeds
3 nos Red Chillies
Grated Ginger
1 1/2 cups Water
Himalayan Salt/Indhu Uppu

Wash Foxtail Millet and then Soaking it 20 to 30 Minutes

Heat 1 Tablespoon oil in a Pan, add 1 tablespoon Chana Dal,Little amount of mustard Seed with 3 Red chillies. Allow the mustard to Crackle, add Small amount of asafoeitida

Add Grated ginger and curry leaves now add the Soaked Foxtail Millet mix Well,allow to cook for a few minutes untile water evaporates

Now Transfer this in to a pressure cooker vessel and add water ( 1 Cup Foxtail Millets : 1.5 Cup Water) mix well allow pressure cook for 4 or 5 whistles.

Once pressure is settled, open the lid Now tasty Upma is ready.
